Zucchini Lasagna

It is no surprise that I am obsessed with zucchini. It is cheap, delicious, and you can use it in so many dishes. I love taking foods that are "blank canvasses" and seeing all the things I can do to them to change them completely, its almost magical! I found this recipe for Zucchini lasagna, and decided to roll with it.

What you need:

3 Medium Zucchinis
Ricotta Cheese
Tomato Pasta Sauce

What to do:
Preheat the oven to 375 degrees.
While preheating, cut the zucchini width wise into slices under a half and inch thick.
Layer the zucchini, sauce, and cheese in a baking dish.

Bake uncovered for 50 minutes, then let sit for 10 minutes.

Sorry this ended up being not so pretty. Who knew that using zucchini instead of pasta would make it fall apart into a big mess?

This dish was so simple and easy to make; only three ingredients and not much effort.  The beauty of this meal is that you can add so many different things and end up with a different meal every night. Add onions, garlic, oregano, hot peppers - its endless! The mix of tomato sauce and ricotta gave it that authentic perfect Italian flavor. The zucchini was both soft and crunchy, giving this dish a nice mix of textures.  Substituting pasta for veggies increased the healthiness level, but didn't jeopardize the comforting factor. This was a great version of the classic comfort food.

Stouffer's Vegetable Lasagna

Hey guys, hope everyone is doing well :)

Today I have another delicious frozen meal to show you! This one is from Stouffer's.  Stouffer's is not a vegetarian brand, and sells other frozen meals like chicken Alfredo and meat lasagna, but the couple of vegetarian items they have are really delicious  and I always keep a stash in my freezer when I'm craving a quick pasta dish.

I love the new Farmer's Harvest Vegetable Lasagna  It is made with whole grain pasta, and no preservatives.  What I love about this lasagna, compared to the Amy's lasagnas  is that it has a really nice and smooth cream sauce, instead of tomato sauce.  I'm not a huge fan of tomato sauce  its actually my least favorite pasta sauce, so it is a really nice change of pace to enjoy a lasagna that isn't so tomatoey. Its also filled with carrots, broccoli, and spinach, and then covered with a layer of bread crumbs.  This lasagna is so creamy  flavorful, and really filling!

Amy's Roasted Vegetable Lasagna

Hey everyone! I have a new food to show you today that I am really excited about.  You all know by now how awesome Amy;s foods are.  My favorite Amy's frozen meals would be the lasagnas.  While my favorite is the Tofu Vegetable, the cheese, and the vegetable are also great too (and don't worry, I plan on showing those to you guys eventually!).  But there's a new lasagna on the block, Amy's Roasted Vegetable Lasagna!

As always, the Amy's signature organic ingredients with no preservatives.

Unlike the other lasagnas, this one has a really good bread crumb crust which gets nice and crispy.  The vegetable flavor in this lasagna is more apparent, you can taste all the zucchini, broccoli, and all the other strong veggie flavors, so if you are a big veggie lover, this one is for you!  I'm not a huge fan of  an intense vegetable flavor, but what I love is the cheese layered in between.  It is so delicious and creamy, unlike the other lasagnas which have a more melty kind of cheese.

Over all I would chalk this up to a win, adding yet another vegetarian lasagna to the list! Take that meat lasagnas!

Amy's Tofu Vegetable Lasagna

Hello everyone! Now that I have finally finished my Thanksgiving series, I can finally get back to some regular posting.  As you all know, I LOVE Amy's brand food.  Its frozen food that I can really feel good about putting into my body.  It is always vegetarian and organic with no MSG or preservatives!

Among the many varieties of foods Amy's makes, she makes three kids of lasagna, and they are all amazing! My favorite of the three is the Tofu Vegetable Lasagna, and I always make sure I stock up on it at the grocery store.  The other varieties are Vegetable, and Cheese.  I have have them both before and like them. I promise to keep and eye out and pick them up if I spot them to show you guys.

Amy's Tofu Vegetable Lasagna really is the perfect lasagna   It is packed with chopped mixed veggies, tofu and delicious sauce in layers of whole wheat pasta, and topped with mozzarella soy cheese. All the flavors come together amazingly.

So. Good. Amy's has does it again.  I recommend that you all go out and try this.  If you like Italian food, veggies, and tofu, this one is for you!
