Peanut Ramen Noodles: Part 1

Hello everyone and welcome to the last post being broadcast from my home in New York!  On Friday, I will begin my journey to move with my boyfriend to Virginia!  I am so excited that finally after 4 years of long distance dating that we will finally be close. However, I am not too thrilled about leaving my home state of New York. No matter what I will always be a New Yorker!

Today I want to show you a quasi recipe that I put together from inspiration I got from good ole' Pinterest.  I have loved Ramen noodles since I was about 8 years old. My dad would cook them for me all the time by microwaving the noodles in the water, then mixing in the spice packet.  When I gave up meat at 11 years old, I stopped eating the chicken flavor (and all the other meat flavors) since they have the stock of the animal in the spice packet. Luckily there is ONE flavor of ONE brand that is vegetarian: Top Ramen Oriental flavor.  I gobbled up these quick noodles until I went off the college.  While all of my classmates ate more Ramen while at school, the local super market didn't carry the Oriental flavor, so I stopped eating them.  Once I came back home I rediscovered my love for the noodle soup and it was all Ramen all the time once again.

Then while browsing Pinterest, I saw some "recipes" that people had created using Ramen. With my love newly restored, I was so excited to try some of them out.  I wanted to start simple my first time. I mixed together a few ingredients, and Peanut Ramen Noodles Part 1 were created!

What you need:

For these noodles I grabbed the jar of peanut butter that I had in my cabinet, asian chili garlic sauce, and of course Top Ramen noodles in Oriental flavor.

What to do:
Fill a bowl with water and add in the dry noodles. Microwave for 3 minutes making sure to stir up the noodles halfway through.
Once they are all cooked, carefully drain out the water making sure to leave a little bit of water in the bowl.
Mix in the Oriental flavor packet, a heaping tablespoon of peanut butter, and chili sauce to taste.
That's it! How easy is that?

I am literally obsessed with these spicy noodles. The peanut butter makes them creamy, while the Ramen flavor packet is the perfect mix of Asian spices. Finally, I love how the chili sauce takes the Ramen to a whole new level of spice!

After I made these noodles, I actually stopped eating Ramen the "normal" way! Adding a few simple ingredients really takes Ramen from a poor college kid's food, to an easy to make Asian dinner!

These totally inspired me to take my Peanut Ramen Noodles to the next level.  I plan on trying these again but with CRUNCHY peanut butter, so it will have bits of peanuts in it just like in pad thai! I also want to try adding veggies or even tofu. I can't wait to keep enjoying and experimenting with Ramen Noodles!

Dr. McDougall's Asian Entree Pad Thai Noodle

Happy Saturday everyone! I am spending the day taking a rest from yoga, doing some more packing, and tonight I'll be going out for my friend's birthday!  But first I needed to share another Dr. McDougall's Asian Entree.

This is one is Pad Thai Noodle.  All of the Dr. McDougall's Asian Entrees are vegan, but this one is also gluten free!

This bowl was filled with clear and chewy gluten free noodles in a sauce that was a bit sour and a bit spicy.  It was definitely not a traditional pad Thai sauce, but it was still quite tasty.  I love that each bite was filled with veggies, tofu, and crunchy peanuts giving it that Thai flare.

 The Pad Thai Noodle bowl isn't my favorite of the  Dr. McDougall's Asian Entrees but it feels great making vegan meal choices. I love that its gluten free too. I know knowing that its totally possible to be vegan and gluten free!

Dr. McDougal's Asian Entree Ginger Soy Noodles

Hello everyone! I have more instant noodles to show you!

I can't get over how much I love these Dr. McDougal's Asian Entrees.  I always got jealous when I saw people eating their cup-o-noodles, especially at work or in college, where the name of the game is "quick lunch."  Not only did those have meat in them, but they were full if chemicals.  It makes me happy to have instant noodles to feel good about, whether you are a vegan or not!

These noodles have a pretty strong ginger flavor, however the soy flavor inst very noticeable. I love to add a little Siracha sauce to these for an extra kick!

Dr. McDougal's Asian Entree Spicy Szechuan Noodle

Hello everyone! I hope you are all having a good week.  On my quest to veganism I have discovered Dr. McDougal's, a brand of instant soup and noodle.  And they are all vegan! Some of them are even gluten free too.  I love making these as a quick meal at work for lunch, or eating them at home with some tofu.  Today I have Asian Entree Spicy Szechuan Noodles to show you guys.

These noodles are full of that szechuan flavor and I love that it has veggies mixed in.  However, its not really spicy, it just has a hint of heat which is good if you are not a big spice fan.  However if you love spicy food like I do you might be a little disappointed.  Not to worry though, just add a bit of siracha sauce and it kicks the heat up!

These noodles taste great, and best of all are quick to make and vegan!  I was worried that trying to eat more vegan foods would mean I would have to do a lot of cooking, which isn't my thing.  But these reassure me that I can make good vegan choices and still be lazy :-P

Dr. McDougal's Asian Entree Thai Peanut Noodle

Hello everyone! I hope you all are staying warm this winter, and had a nice Valentine's day, weather you spent it with a special person, or with your friends and family.  My boyfriend and I enjoyed a really nice dinner.  I found this nice little place close by that I had never been to before.  We shared a nice arugula  goat cheese and apple salad, and for my main course I had a pasta with butternut squash topped with cheese. Everything was sooooo delicious! Then we saw Colin and Brad live perform some hysterical improv just like they were on Whose line is it anyway! Haha I still crack up when I think about the show, I recommend everyone go see it!



Well, I promised I would be showing you some of the vegan food I have been eating, and here its is!

A lot of the time at work, when its time to get lunch, I run across the street to the supermarket and get some Dunkin Dontus.  But one day I decided to venture out to the rest of the store to see what I could find.  To my amazement, I found the vegan, vegetarian, organic, and gluten free part of the store.  I knew I only had a few minutes to look around before I went to work, so I only grabbed a few things.  After work I went back and stocked up on lots of delisious things.

My new obsession is Dr. McDougals.  They make different cup-o-noodles and dry soups, where you just add hot water to them.  What I love about these is that they are all natural and always vegan.  Some of them are gluten free too, yay!

I gravitated right twards the Asian Entree in Thai Peanut Noodle.  Love Thai Flavors. Love Peanuts. Match made in heaven.

I love these little cups of noodles! They are full of flavor and super easy to make when you're in need of a quick lunch.  These are especially good for taking to work because you can just grab it and go.  I love how this one had little bit of peanuts in it which gave it a nice crunch and flavor.  It makes me feel like all my coworkers eating thier cup-o-noodles...except all natural and vegan, making me the big winner.
