What you need:
1 Box of pasta (any shape)
2 Ripe Avocados
1 Jar of Pesto
Lemon juice
What do to:
Start off by getting your water boiling and cooking the pasta just as you normally would.
Once the pasta is just about done, you can prepare your avocados. Slice them down the center and pull them apart so you have 2 halves. Pop out the pit, spoon the meat out into a bowl, and use the back of the spoon to mush it up a bit.
Your pasta should be all cooked by now, so strain out the water and then dump the pasta back into the pot on low eat.
In order to not dry out the pasta and have it stick to the pot, dump in your jar of pesto right away and mix in in. Then you can mix in your avocado. The avocado is a bit hard to evenly mix so it will take a few minutes. Don't mix it in perfectly, only enough so that the pasta is coated, making sure to leave some nice chunks of avocado in there.
While I was mixing in the avocado, my dad decided to pick up my camera and take photos...thanks dad.
Finally pour in some lemon juice. I like my food really lemony (I guess that's the Greek in me), so I poured in a lot, but you only need enough to keep your pesto/avocado sauce from browning.
You're all done! I absolutely LOVED this pasta! The pesto flavor was pretty strong, which sometimes masked the subtle avocado, but once in a while I would get a big piece of avocado on my fork and it filled my mouth with flavor. The pesto sauce I picked up was really delicious, it had the perfect authentic basil and Parmesan flavor, and it even had bits of pine nuts in it, and you all know how much I love pine nuts! They added a nice bit of crunch to the creamy dish.
This was really simple to make, I pretty much just grabbed a few ingredients and whipped it right up. If you love pesto as much and I do, this pasta is for you!
